中文摘要:以中国毛虾为主要原料 ,经烘烤 ,一次调味 ,二次凋味等工序 ,研制出了中国毛虾方便食品。产品水分、蛋白质、粗脂肪、灰分等含量分别为 13 4%、14 6%、5 2 8%和 7 8% ;它含有 18种氨基酸 ,总量为 3 45 0mg/kg ,其中人体所需的 8种必需氨基酸总量为 13 3 1mg/kg ,在 8种必需氨基酸中 ,赖氨酸和亮氨酸的含量最高 ,分别达到 2 81mg/kg和 2 74mg/kg ;中国毛虾方便食品蛋白质的氨基酸分为 10 0。此外 ,它的Ca、P、Mn、S等的含量较丰富 ,且Ca/P约为 1 5 ,较为重要的Fe、Zn、Cu等含量分别为 15 1mg/kg、12 2mg/kg、8 8mg/kg。
外文摘要:A novel type of fast food was developed using caddice wool chine through baking, first and second seasoning. The finished product contains 13.4% moisture, 14.6% protein, 52.8% fat and 7.8% ash respectively. This product contains 18 amino acids and its total amount of amino acids is 3450 mg/kg, with the total amount of essential amino acids being as high as 1331 mg/kg. Lysine and leucine are rich by reaching 281 mg/kg and 274mg/kg respectively. AAS of protein in this product is 100. Additionally the content of calcium, phosphorus, manganese and sulphur in this product are rich. The ratio of calcium and sulphur is about 1.5, and the content of iron, zinc and cuprum is 15.1 mg/kg, 12.2 mg/kg and 8.8 mg/kg respectively. So this new-style aeafood fast food is of great potential for development because its nutrition, fresh color, good texture and delicate flavor.
