外文摘要:In order to achieve rapid identification of the animal source of Trachinotus ovatus, in this study, the samples were processed for protein extraction, digestion with trypsin, protein signal acquired by Exion AD-SCIEX ZenoTOF 7600, data matched by NCBI and targeted detection by TripleQuad 5500+ LC-MS. As a result, there were 77 protein information of Trachinotus ovatus collected; the screened enzymatic protein peptides of Trachinotus ovatus were compared with the protein peptides of 10 common economic fish by multiple reactions monitoring, and four marker peptides of Trachinotus ovatus protein peptides were obtained, which were GPEGPQGSR, GPAGANGPAGPR, GEIGPVGATGPAGPQGAR and GSTGEVGATGPAGNR. Then a rapid targeted LC-MS detection method was established based on the above marker peptides, and the correlation coefficient of this method was greater than 0.995, indicating that it could be used as an identification method for the traceability of Trachinotus ovatus. This technology will be advantageous for identifying and authenticating food sources, as well as conducting research on food-derived peptides and maintaining quality control in the future. ? 2024, The Authors.
