中文摘要:【目的】研究香港牡蛎(Crassostrea hongkongensis)中锌元素的分布及存在形态,为其开发利用提供基础数据。【方法】采用ICP-MS技术检测锌元素在全脏器、鳃、外套膜、闭壳肌、内脏团及牡蛎提取组分中的含量,初步分析其存在形态。【结果】牡蛎全脏器锌质量分数达(1267.51±2.85)μg/g(干基,下同),组织器官中鳃的锌质量分数最高,达(2242.63±22.10)μg/g;内脏团中的锌占牡蛎全脏器总锌的占比达45.46%;牡蛎全脏器中无机态与有机态锌元素比例约为1.55∶1。从去内脏牡蛎中提取到一种富锌水溶性多糖组分,进一步分离的多糖组分CT1锌质量分数高达922.18μg/g,红外光谱分析表明其存在多种可与锌配位的官能团。【结论】香港牡蛎富含锌元素,其分布存在组织差异,且无机态锌含量高于有机态锌,蛋白锌和多糖锌是有机态锌的两种重要存在形态,水溶性多糖结合锌较多。
外文摘要:【Objective】To study the distribution and existential forms of zinc in oyster(Crassostrea hongkongensis)and to provide basic data for its development and utilization.【Methods】The contents of zinc in whole viscera,gill,mantle,adductor muscle,visceral mass and the extraction components of oyster were detected by ICP-MS,and its existential forms were analyzed.【Results】The results showed that the zinc content in the whole viscera was(1267.51±2.85)μg/g(dry basis,the same below),the content of zinc in gill was the highest,reaching(2242.63±22.10)μg/g.The percent of zinc in the visceral mass was up to 45.46%of total Zn in the whole viscera of the oyster.The ratio of inorganic to organic zinc in the whole viscera of the oyster is about 1.55∶1.A water-soluble polysaccharide rich in Zn was extracted from the eviscerated oyster.CT1 obtained after water-soluble polysaccharide purified has a high zinc content of 922.18μg/g.Infrared spectrum analysis showed that there were several functional groups which could coordinate with zinc.【Conclusion】Crassostrea hongkongensis is rich in Zn,and its distribution is different in different tissues.Inorganic zinc content is higher than organic zinc.Protein zinc and polysaccharide zinc are two important forms of the organic zinc,and the water-soluble polysaccharide can combine more zinc.
