中文摘要:利用胰酶、枯草杆菌中性蛋白酶,在50℃、pH为7.0~8.0,m(贝肉)∶V水=1∶3的条件下,对马氏珠母贝肉进行双酶水解4h制备得到酶解产物及残渣。利用Alcalase2.4L、胃蛋白酶、复合蛋白酶、木瓜蛋白酶对残渣进行再次酶解。结果表明:残渣蛋白质含量按干基计达54.2%;Alcalase 2.4L、复合蛋白酶、木瓜蛋白酶对残渣的酶解效果较好;残渣的木瓜蛋白酶酶解产物ACE抑制活性较强;马氏珠母贝肉酶解产物清除自由基活性较强的组分分子量为944u,残渣木瓜蛋白酶酶解产物清除自由基活性较强的组分分子质量在1300~259u。

外文摘要:Hydrolysate with ACE inhibitory activity was prepared from the edible part of Pinctada martensii by Pancreatin and Neutral protease, under the condition of 50℃, pH7.0-8.0, solid water ratio 1 : 3 and reaction time 4h. The offal and the hydrolysate were collected. Alcalase 2.4L, Pepsin, Protamex and Papain were chosen to hydrolyze the offal. The results showed that the crude protein content of the offal was 54.2% on a dry basis. Alcalase 2.4L, Protamex and Papain had a good capacity for hydrolyzing the offal. The hydrolysate of the offal by Protamex exerted a relatively strong ACE inhibitory activity. The fraction of the gel column chromatogram of Pinctada martensii hydrolysate with molecular weight being 944u exerted the strongest ACE inhibitory activity. The fraction of the gel column chromatogram of Pinctada martensii offal hydrolysate with molecular weight ranged from 1300u to 229u exerted the strongest ACE inhibitory activity
