中文摘要:以马铃薯渣为原料,在化学法基础上采用双酶降解法提取水不溶性膳食纤维(IDF),探讨了酶解的工艺条件,并对膳食纤维持水性和持油性进行了研究,结果表明:耐高温α-淀粉酶的最佳酶解条件为酶量80 u/g,温度90℃,p H6.5,时间2 h;木瓜蛋白酶最佳酶解条件为酶量100u/g,温度50℃,p H7.5,时间15 min。在此工艺条件下水不溶性膳食纤维得率为19.0%,且持水力与持油力性能较好,分别为6.63 g/g和2.07 g/g。

外文摘要:The technology of extracting water insoluble dietary fiber (IDF) from potato residue was studied by two enzymes. Results showed that the optimum digestion conditions for high temperature resistant alpha amylase were enzyme amount 80 u/g, temperature 90 ℃, pH 6.5 and time 2 h; The optimum digestion conditions for papain were enzyme amount 100 u/g, temperature 50 ℃, pH 7.5 and time 15 min. The yield of water insoluble dietary fiber was 19.0% in this process conditions. IDF from potato residue showed good capabilities of holding water and holding oil, their values being 6.63 gig and 2.07 g/g, respectively.
