中文摘要：【目的】对比分析贵妃鸡与怀乡鸡、北京油鸡的肌纤维特性差异,为其品种选育及推广利用提供科学依据。【方法】取120日龄贵妃鸡、怀乡鸡和北京油鸡的胸肌和腿肌,经石蜡切片后用苏木精染色,显微镜下测定肌纤维直径及肌纤维密度,对比不同品种鸡的肌纤维特性。【结果】3种鸡均表现为公鸡的胸肌肌纤维直径比母鸡的细,肌纤维密度比母鸡的高;但在腿肌肌纤维方面,贵妃鸡和北京油鸡表现为公鸡的腿肌肌纤维直径比母鸡的粗、肌纤维密度比母鸡的低,而怀乡鸡是公鸡的腿肌肌纤维直径比母鸡的细、肌纤维密度也比母鸡的低。贵妃鸡、怀乡鸡、北京油鸡的胸肌肌纤维直径均小于腿肌肌纤维直径,胸肌肌纤维密度则均高于腿肌肌纤维密度。肌纤维直径由粗到细依次为怀乡鸡>北京油鸡>贵妃鸡,肌纤维密度由高到低依次为北京油鸡>贵妃鸡>怀乡鸡。【结论】贵妃鸡的肉品质较细嫩,优于怀乡鸡而与北京油鸡相媲美,具有较高的推广价值。

外文摘要：【Objective】The differences of muscle fiber characteristics among Princess chicken, Huaixiang and Beijing Fatty chicken were compared to provide scientific references for species breeding and promotion. 【Method】Chest muscle and leg muscle of 120-day-old Princess, Huaixiang and Beijing Fatty chicken were cut by paraffin and stained by hematoxylin. Muscle fiber diameter and density were determined under microscope and muscle fiber characteristics among different chicken varieties were compared. 【Result】The results showed that the chest muscle fiber diameter of cock was smaller than that of hen and density of cock was higher than that of hen. The leg muscle fiber diameter of Princess and Beijing Fatty chicken cock was bigger than that of hen and density of cock was lower than that of hen. The leg muscle fiber diameter and density of Huaixiang cock was smaller than those of hen. Chest muscle fiber diameter of the three varieties was lower than that of leg muscle fiber. Chest muscle fiber density was higher than that of leg muscle fiber. Muscle fiber diameter order was Huaixiang chicken〉Beijing Fatty chicken〉Princess chicken. Muscle fiber density order was Beijing Fatty chicken〉Princess chicken〉Huaixiang chicken. 【Conclusion】The meat of Princess chicken and Beijing Fatty chicken with high promotion value was tender and better than Huaixiang chicken.
