外文摘要:This study used treatment time and treatment power as factors to evaluate the impact of atmospheric cold plasma technology (ACP) on endogenous enzyme characteristics and muscle protein properties in the golden pomfret (Trachinotus ovatus). The results showed that the enzyme activity of cathepsin B, L, and calpain in crude protease extracts (CPE) decreased significantly with the increase of ACP treatment power and treatment time (p ? 2022, The Authors.
