中文摘要:文章对流沙湾海域皮氏叫姑鱼的肌肉营养成分进行了测定分析,并对其营养价值做出了评价。结果表明:皮氏叫姑鱼肌肉(鲜样)中水分、灰分、粗脂肪和粗蛋白含量分别为76.41%、1.35%、7.19%和16.92%。皮氏叫姑鱼肌肉中检测到21种脂肪酸,其中饱和脂肪酸(SFA)有7种,占39.91%;单不饱和脂肪酸(MUFA)有4种,占25.21%,多不饱和脂肪酸(PUFA)有10种,占24.12%。多不饱和脂肪酸中DHA和EPA含量分别为8.63%和5.20%。经测定,皮氏叫姑鱼肌肉(干样)中有17种氨基酸,第一限制氨基酸是缬氨酸,必需氨基酸占氨基酸总量(TAA)的33.05%,鲜味氨基酸占氨基酸总量的42.91%。

外文摘要:Nutritional compositions in muscle of Johniusbelangerii were determined and evaluated. The results showed that the contents of moisture, crude ash, crude fat and crude protein in fresh muscles were 76.41%, 1.35%, 7.19% and 16.92%, respectively. 12 kinds of fatty acids were found in muscles of J. belangerii, in which there were 7 saturated fatty acids (SFA), accounting for 39.91%, 4 monoun- saturated fatty aeid(MFA) accounting for 25.21%, and 10 polyunsaturated fatty acids (PUFA)accounting for 24.12%in dry samples (mass fraction), respectively: The contents of DHA and EPA, which in- volved in (PUFA), were 8.63% and 5.20%, respectively. 17 kinds of amino acids were identified in the muscles of J. belangerii, and the first limiting amino acid was Val. The essential amino acids (EAA) accounts for 33.05% and the delicious amino acids accounting for 42.91% in total content of amino acids, respectively.
