中文摘要:本试验随机选取在相同条件下饲养的120日龄贵妃鸡、怀乡鸡和北京油鸡3种优质鸡母鸡各16只,分别取其胸肌做成切片,用于对其肌纤维密度、肌纤维直径和肉品质进行比较,同时对肌纤维特性与肉品质的相关性进行研究。结果表明:Ⅳ肌纤维特性:贵妃鸡、北京油鸡、怀乡鸡的肌纤维直径分别为15.29μm、17.04μm、17.93μm,贵妃鸡肌纤维直径比怀乡鸡、北京油鸡肌纤维直径分别小1.75μm和2.64μm,差异极显著(P<0.01);贵妃鸡、北京油鸡、怀乡鸡的肌纤维密度分别为961.54根/mm^2、1 204.63根/mm^2、889.13根/mm^2,怀乡鸡肌纤维密度比贵妃鸡、北京油鸡分别少72.41根/mm^2和315.50根/mm^2,差异极显著(P<0.01)。Ⅳ肉品质:北京油鸡胸肌肉色优于怀乡鸡,而怀乡鸡胸肌肉色优于贵妃鸡;三种优质鸡胸肌pH值差异不显著(P>0.05),范围在6.1~6.2之间;贵妃鸡胸肌滴水损失高于怀乡鸡,怀乡鸡高于北京油鸡,分别为4.03和3.21,贵妃鸡和怀乡鸡胸肌滴水损失与北京油鸡差异极显著(P<0.01)。Ⅳ相关性:肌纤维直径与密度呈负相关,肌纤维特性与肉色呈正相关,肌纤维特性与肌肉pH值和滴水损失呈负相关。
外文摘要:Meat quality,muscle fiber and its relationship were tested among 16 birds in each breed of princess, Huaixiang and Beijing You chickens raised under the same conditions for 120 days. The results showed that breast muscle diameter of princess, Beijing You and Huaixiang chicken was 15.29 μm, 17.04 μm, 17.93 μm, respectively,princess chicken was significantly lower than those of Beijing You and Huaixiang chicken by 1.75 μm and 2.64 μm (P〈0.01). However, breast muscle density of princess, Beijing You and Huaixiang chicken was 961.54 root/mm2, 1 204.63 root/ram2, 889.13 root/mm2,respectively. Beijing You chicken was significantly higher than those of princess and Huaixiang chicken by 72.41 root/mm2 and 315.50 root/mm2 (P〈0.01). In all the three different chickens,there was significant difference in meat color (P〈0.05),Beijing You chicken was higher than Huaixiang chicken by 4.53, while Huaixiang chicken was higher than princess chicken by 3.20. There was no significant difference in pH of the three different broilers(P〉0.05),ranging from 6.1 to 6.2. In the drop water loss,princess chicken was higher than Huaixiang chicken by 4.03,while Huaixiang chicken was higher than Beijing You chicken by 3.21,however the drip loss of Beijing You chicken was significantly higher than those of princess and Huaixiang chicken (P〈0.01). There was negative correlation between fiber diameter and density,positive correlation between muscle fiber characteristics and meat color, negative correlation between muscle fiber characteristics and pH,drip loss of princess,Huaixiang and Beijing You chicken.
