中文摘要:为挖掘华贵栉孔扇贝(Chlamys nobilis)高值化利用的潜力,选用复合蛋白酶水解华贵栉孔扇贝的闭壳肌,探讨华贵栉孔扇贝闭壳肌酶解物(Enzymatic hydrolysate of Chlamys nobilis adductor muscle, EHCA)对α-葡萄糖苷酶活性的影响和对DPPH自由基的清除能力,并以空腹血糖浓度、血清胰岛素含量、肝脏丙二醛含量和超氧化物歧化酶活性等为指标,评价EHCA对正常小鼠体内辅助降血糖功能和抗氧化活性。结果表明,EHCA具有较好的α-葡萄糖苷酶抑制活性,且其DPPH自由基清除能力随着酶解物质量浓度增加而上升;动物实验结果显示,一定质量浓度的EHCA能增强小鼠的糖耐量,并显著降低小鼠肝脏丙二醛浓度,提高超氧化物歧化酶活性。复合蛋白酶能够有效酶解华贵栉孔扇贝闭壳肌,其酶解物具有较好的α-葡萄糖苷酶抑制活性和抗氧化活性,具有一定的辅助降血糖作用。本研究结果为开发辅助降血糖海洋功能食品提供理论依据。

外文摘要:In order to tap the potential of high-value utilization of Chlamys nobilis,using compound protease to hydrolyze Chlamys nobilis adductor muscle,the effect of EHCA(enzymatic hydrolysate of Chlamys nobilis adductor muscle)on the activity ofα-glucosidase and the scavenging ability of DPPH free radicals was explored.The fasting blood glucose concentration,serum insulin content,liver malondialdehyde and superoxide dismutase content were used as indicators to evaluate the auxiliary hypoglycemic function and antioxidant activity of EHCA in normal mice.The results showed that EHCA had goodα-glucosidase inhibitory activity,and its DPPH free radical scavenging ability increased with the concentration of the enzymatic hydrolysate.The results of animal experiments showed that a certain concentration of EHCA could enhance the glucose tolerance of mice,significantly reduced the liver malondialdehyde and increase the activity of superoxide dismutase.In conclusion,the compound protease can effectively enzymolyze the adductor muscle of Chlamys nobilis,and its enzymatic hydrolysate has goodα-glucosidase inhibitory activity and antioxidant activity with a certain auxiliary hypoglycemic effect.The results may provide a theoretical basis for the development of auxiliary hypoglycemic marine functional foods.
