中文摘要:利用胰酶、枯草杆菌中性蛋白酶,在50℃、pH为7.0~8.0、料水比1:3的条件下,对马氏珠母贝肉双酶水解4h制备得到酶解产物及残渣。利用Alcalase2.4L、胃蛋白酶、复合蛋白酶、木瓜蛋白酶对残渣进行再次酶解。结果表明:Alcalase2.4L、复合蛋白酶对残渣的酶解效果较好;残渣的复合蛋白酶酶解产物自由基清除活性较强;马氏珠母贝肉酶解产物清除自由基活性较强的组分分子量在1910u~944u之间,残渣复合蛋白酶酶解产物清除自由基活性较强的组分分子量在3472u~834u之间。

外文摘要:Hydrolysate with free radical scavenging activity was prepared from the edible part of Pinctada martensii by pancreatin and neutral protease, under the condition of 50 ℃, pH7.0-8.0, solid water ratio 1:3 and reaction time 4 h. The offal and the hydrolysate were collected. Alcalase 2.4 L, Pepsin, Protamex and Papain were chosen to hydrolyze the offal. The results showed that Alcalase 2.4 L and Protamex had a good capacity for hydrolyzing the offal. The hydrolysate of the offal by Protamex exerted a relatively strong radical scavenging activity. The fraction of the gel column chromatogram of Pinctada martensii hydrolysate with molecular weight ranged from 1 910 u to 944 u exerted the strongest radical scavenging activity. The fraction of the gel column chromatogram of Pinctada martensii offal hydrolysate with molecular weight ranged from 3 472 u to 834 u exerted the strongest radical scavenging activity.
